Butterfly Pea Flower Tea is a popular drink in Thailand where it is often served as a refreshing iced tea. The blue edible flowers make a beautiful and intensely blue infusion that will change colour from blue to purple or pink with a splash of lemon or lime. The flowers can be used to colour ice cubes, milky drinks, ice cream, baked goods, rice and pasta, cocktails, etc. The brew has a mild taste if served on its own and is traditionally enjoyed sweetened with honey or sugar. The flowers can also be mixed with a variety of other herbs, such as peppermint, lemon myrtle, or ginger for a refreshing infusion.
Use 4-5 flowers per 200 ml cup, brew for 3-5 minutes. Brewing temperature 100°C.
